Gluten, Dairy & Sugar Free Banana Bread
This is a yummy and very healthy alternative to traditional banana bread. Coconut Oil and flour are new ingredients for me and I’m so far pretty impressed. Coconut oil is a great alternative to cooking oil or butter – try it on roast potatoes! You can buy the coconut flour in bulk from on-line health food stores or local independent shops. (It’s full of healthy fat’s and protein).
3-4 over ripe bananas
70g Garden of Life Organic Extra Virgin Coconut Oil
1 free range egg
1 tsp vanilla extract
1 1/2 tsp cinnamon
60g coconut flour
1 1/2 tsp baking powder
1/4 tsp sea salt
Method:
- Mash the bananas thoroughly, then add the remaining ingredients in order as listed.
- Be sure to beat slightly between each addition.
- Spoon batter into a well greased bread loaf tin, smooth down with a pallet knife or spoon and bake at 180C (for fan oven) for 45 minutes.
- Allow to sit inside the tin to cool, then turn out on to a rack.
- Serve on it’s own or with a dollop or organic (orangutan friendly) peanut or almond butter!
Because there is no sugar and very little fat the cake only lasts a couple of days and probably best kept in the fridge.
